Western Cooking Class 西廚班

Learn how to create popular Western-style breakfasts, appetizers, entrees, desserts, and more. Hands-on training in food preparation, knife skills and cutting techniques, creative plating techniques and food safety standards. Understand kitchen terminology and proper kitchen etiquette. ESL level 4 or above recommended.

EligibilityTo be eligible for the Western Cooking Class, you must be:

  • A legal U.S. resident with authority to work in the U.S. (i.e. valid Social Security Card)

  • 18+ years or older

  • ESL Level 4 or above

  • Looking to change professions or find employment

CostQualified students can have their tuition and fees subsidized by the Office of Economic and Workforce Development (OEWD). Contact us to find out if you're qualified

Success Story

Terrilyn crafting her rolled omelet during the final hands-on examination.

Terrilyn first learned about our Western Cooking Training from her case worker.  She was a single mom of a newborn and received financial assistance from CalWORKs.  She had tried various jobs in the past, such as cashier, grocery clerk and security guard, but none of them provided her with a sense of fulfillment.  She had a strong sense of self-awareness and an urgency to develop her career in order to be financially independent in the near future.  Terrilyn had taken some preparatory culinary classes before and occasionally helped out with the after-school program as a sous chef.  She felt that cooking brought her joy, so she decided to pursue her dream of becoming a chef in 3-5 years.  Terrilyn signed up for our Western Cooking Class in fall of 2023.


The course instructor noted that Terrilyn was a quick learner.  While she made occasional mistakes, she quickly recognized and corrected them.  Throughout the program, Terrilyn proved to be an excellent team player and curated her work very nicely. She successfully completed the training on time and was fully prepared for a full-time job.  

Terrilyn was proactive and receptive to the instructor’s job search and preparation suggestions.  We shared job openings for cooks or line cooks with her and assisted in updating her resume. Additionally, we informed her about the Saluhall hiring event, and she applied for a line cook position onsite. With the timely and closely followed up done by the OEWD team, we were notified well in advance of the client's application status so that we could provide assistance to Terrilyn, who was able to advance to the second round of hiring. Terrilyn received support from the instructor, preparing for her second interview through conversations and mock interviews. As a result, her interview went well, and she was considered for the pastry chef position which was her goal.


In March 2024, Terrilyn received an official offer from Saluhall Inc for a line cook position. She enjoyed her work and was grateful for the skills she acquired through the Western Cooking Training at CCSC, which proved to be very useful in her new role. She was able to apply what she learned at her job, further solidifying her passion for cooking.
